I do not like pasta but I do love tortellini especially in a soup with veggies. Since watching the documentary Food Choices 5x I am learning more about a plant based diet (I was vegetarian for a year and the last 3 months I went plant based) If you haven’t seen the documentary yet WATCH IT! There is so much great information even if you don’t eat or want to follow a plant based diet. The programs that I and my clients and coaches use can be based on however you choose to eat including plant based. Well I guess not based on any way you choose to eat Obviously it has to be a real food diet.
So I have been leaving meat out of quite a few of my meals. and 1) I don’t miss it 2) I feel great. So I think this may be an easier transition than I thought.
This soup was amazing and worked great for Johnny and I. He wanted chicken and I did not and I made it work.
When you want something you make it happen. No excuses.
Recipe below. Let me know if you make it and how you like it. This is the 2nd time making it and I love it! Oh and boyfriend approved!
>> What you need <<
1 tablespoon Extra Virgin Olive Oil
1 large sweet onion, peeled and chopped
1 red bell pepper, seeded and chopped
4 big carrots, sliced
3 garlic cloves, minced
Boneless skinless chicken breast shredded- 2 large breasts (I left this on the side and added to Johnny’s bowl because I didn’t want any meat)
4 cups chicken broth
3 cups of water
Three Cheese Tortellini
3 big handfuls of spinach- I don’t measure
3ish tablespoons fresh chopped parsley
1.5 teaspoons dried thyme leaves
1 teaspoon crushed red pepper

Place a large sauce pot over medium heat. Add the olive oil, garlic and chopped onions. Saute for 3 minutes to soften. Then add the chopped bell pepper, carrots, and mushrooms. Saute another 3 minutes.
Add chicken broth + water, thyme, crushed red pepper, to the pot. You can add the chicken breast at this point or boil them separately. Bring to a simmer. Lower the heat a little and simmer 15 minutes, until the chicken in cooked through. Remove the chicken and place on a cutting board.
Turn the heat back to medium. With the broth still simmering, stir in the Three Cheese Tortellini. Stir well so it doesn’t stick together. Then chop or shred the chicken and place back in the soup (or leave on side and just add to the bowl like I did for Johnny)
Once the tortellini is cooked through, about 10-14 minutes, turn off the heat. Stir in spinach, and parsley.
